Alfalfa Seafood Cocktail

Great little seafood treat. Prawns and mussels served in a spicy mayonnaise and tomato based sauce.
Ingredients -
4 Ounces Prawns (peeled)
3 Ounces Mussels (cooked)
2 Tablespoons Lemon Juice
8 Ounces Low Calorie Mayonnaise
2 Tablespoons Tomato Puree
few drops Tabasco Sauce
1/2 Teaspoon Worcestershire Sauce
4 Ounces Alfalfa Sprouts
 
Preparation:

1. Place the shellfish in a bowl and sprinkle with 1 tablespoon lemon juice and freshly ground white pepper.

2. Blend the mayonnaise, puree and sauces.

3. Add the remaining lemon juice.

4. Arrange alfalfa around the edge of four serving plates.

5. Spoon the shellfish in the center and top with mayonnaise and garnish.

Leave Shells On
Leaving the shell on while steaming or boiling prawns helps preserve the juices and natural flavors much the way leaving the skin on chicken does.

Use Fresh Prawns Immediately

To ensure optimal taste use fresh prawns within two days of purchase, as prawns are very perishable. Freeze prawns that wont be used immediately.
