Fried Prawns in Garlic

Prawns marinated in white soy sauce and fish sauce are sautéed until pink, served hot with crispy garlic and coriander leaves garnish.

Ingredients -
12 Prawns, rinsed and drained
4 Coriander Roots
2 tablespoons Garlic, finely chopped
1 tablespoon Peppercorns
1/3 cup Vegetable Oil
2 tablespoons White Soy Sauce
2 tablespoons Fish Sauce
Coriander Leaves for garnishing
 
Preparation:

1. Cut center of each prawn from head to tail.

2. Using a mortar and pestle, crush the coriander roots, chopped garlic and peppercorns.

3. Mix thoroughly.

4. Add prawns, spice mixture white soy sauce and fish sauce to bowl, toss to coat and refrigerate 30 minutes.

5. Remove prawns and bring to room temperature, about 5 minutes.

6. Add vegetable oil to large skillet and heat over medium heat.

7. Add prawns and sauté until they turn red.

8. Remove fried prawns from the pan.

9. Reduce heat to low. Add chopped garlic in vegetable oil using low heat. Fry until golden.

10. Garnish prawns with coriander leaves and crispy garlic.

Flash Freezing

Flash freezing prawns and shrimp the minute they are caught preserve their moisture content. The meat of prawns can dehydrate quickly in the open air. Flash freezing prevent this from happening.
