Garlic and Brandy Prawns

Prawns marinated in cornstarch and kosher salt are stir-fried with garlic, brandy, salt, sugar, butter, and green onion.

Ingredients -
1 Pound Tail-On Prawns, deveined, rinsed and drained
1 teaspoon Cornstarch
1/2 teaspoon Kosher Salt
2 tablespoons Cooking Oil
2 Garlic Cloves, minced
1 tablespoon Brandy
1/2 teaspoon Kosher Salt
1/2 teaspoon Sugar
2 tablespoons Unsalted Butter
2 Green Onions, cut into 2-inch pieces
 
Preparation:

1. Add cornstarch and 1/2 kosher salt to medium bowl. Marinate shrimp in cornstarch mixture 5 minutes.

2. Place wok over high heat. When wok is hot, carefully add 2 tablespoons cooking oil.

3. When oil is hot and just starting to smoke, add prawns.

4. Fry until they are half-done, 30 seconds per side.

5. Remove from wok quickly, leaving the oil in the wok.

6. Reduce heat to medium-high.

7. Add the garlic, stir-fry for 10 seconds.

8. Stir in the brandy, salt, sugar, and butter.

9. Cook 1 minute to thicken slightly. Return the half-cooked prawns to the wok and green onion.

10. Stir-fry until prawns are cooked through, about 2 minutes.
