1. Add olive oil to large skillet and heat over medium-high heat.
2. Stir in minced garlic and ginger. Stir-fry 30 seconds.
3. Add the prawns and stir-fry until they curl around to form a C shape.
4. Add dash of sherry and the soy sauce. Stir in the green onions and remove from heat.
5. Serve on a bed of Chinese white rice or egg noodles.
