1. Add fresh lemon zest, garlic, fresh ginger, dried red pepper flakes, fresh oregano, fresh sage, fresh coriander, and sea salt to a mortar and crush with a pestle to a coarse paste. Stir in the extra-virgin olive oil.
2. Leaving the shells on the prawns, cut them in half lengthways.
3. Place prawns in a large bowl and pour marinade over prawns. Toss to coat. Cover bowl with plastic wrap and refrigerate for 1 hour.
4. Preheat the grill to medium heat. Grill the prawns over direct heat for 1 minute, and then turn over.
5. Cook for a further minute or until they're just changed color and are cooked through.
6. Remove from the grill and pile onto a serving platter.
7. Drizzle with extra-virgin olive oil and fresh lemon juice and season with fresh ground black pepper.
