Grilled Prawns

Prawns marinated in fresh lemon zest, garlic, fresh ginger, dried red pepper flakes, fresh oregano, fresh sage, fresh coriander, sea salt and extra-virgin olive oil. Prawns are grilled over direct heat until cooked through but still moist.

Ingredients -
16 Whole Unshelled Prawns
2 tablespoons Extra-Virgin Olive Oil
2 tablespoons Fresh Lemon Juice
Fresh Ground Black Pepper

Marinade:
2 teaspoons grated Fresh Lemon Zest
3 Garlic Cloves, peeled
1 teaspoon grated Fresh Ginger
1 teaspoon Dried Red Pepper Flakes
1 tablespoon chopped Fresh Oregano
1 tablespoon chopped Fresh Sage
1 tablespoon chopped Fresh Coriander
1 teaspoon Sea Salt
1/3 cup Extra-Virgin Olive Oil
 
Preparation:

1. Add fresh lemon zest, garlic, fresh ginger, dried red pepper flakes, fresh oregano, fresh sage, fresh coriander, and sea salt to a mortar and crush with a pestle to a coarse paste. Stir in the extra-virgin olive oil.

2. Leaving the shells on the prawns, cut them in half lengthways.

3. Place prawns in a large bowl and pour marinade over prawns. Toss to coat. Cover bowl with plastic wrap and refrigerate for 1 hour.

4. Preheat the grill to medium heat. Grill the prawns over direct heat for 1 minute, and then turn over.

5. Cook for a further minute or until they're just changed color and are cooked through.

6. Remove from the grill and pile onto a serving platter.

7. Drizzle with extra-virgin olive oil and fresh lemon juice and season with fresh ground black pepper.
