Honey Walnut Prawns

Deep fried prawns tossed in honey mixture and sprinkled with deep fried sugar coated walnuts.

Ingredients -
1 pound Large Prawns, peeled and deveined
1/2 cup Walnuts, rinsed
5 cups Water
1 cup Sugar
2 cups Oil
1/2 cup Cornstarch
1/2 cup Egg Whites
2 tablespoons Honey
3 tablespoons Mayonnaise
1 tablespoon Fresh Lemon Juice
1/2 tablespoons Condensed Milk
1/2 cup Oil
 
Preparation:
Walnuts:

1. Boil walnuts in 4 to 5 cups water, continually changing water until clear.

2. When water stays clear, stir in sugar and boil until sugar dissolves.

3. Remove walnuts to paper towels and drain.

4. Heat 2 cups of oil in saucepan until almost smoking.

5. Carefully add walnuts and deep fry until they're shiny and brown, no longer golden.

6. Place walnuts on cookie sheet, let cool.

Prawns:

1. Add cornstarch and egg whites to medium bowl. Stir in prawns and toss to coat.

2. Deep fry the prawns in hot oil until golden brown. Drain prawns on paper towels.

3. Fold prawns into honey mayonnaise mixture.

4. Mix well, sprinkle with walnuts, and arrange on platter.
