Prawn and Mushroom Noodles

Simple and delicious prawn and mushroom pasta dish. This asian style recipe features shiitake mushrooms, and oyster sauce.
Ingredients -
1 Teaspoon Sesame Oil
1 Red Chili (deseeded and finely chopped)
1 Pack Shiitake Mushrooms (120 g, cut into quarters)
1 Bunch Salad Onions (cut into diagonals)
1 Pack Frozen Extra Large Tiger Prawns (defrosted, 200 g)
3 Tablespoons Oyster Sauce
1 Teaspoon Tomato Puree (paste)
Cashew Nuts (50 g)
Salt and Freshly Cracked Black Pepper
 
Preparation:

1. Heat the oil and stir-fry the chili, mushrooms and salad onions for 1 minute.

2. Add the prawns, oyster sauce, tomato puree and cook for 6 minutes.

3. Add the seasoning and cashew nuts.

4. Toss with the noodles just before serving.

Clams and Mussels

Use clams and mussels the day you buy them. Line a bowl with paper towels, place the clams or mussels in the bowl and place in the refrigerator until ready to use.

Buy clam juice in bottles. Check the bottom of the bottle for residue. Choose the bottles with the cleanest liquid.
