Prawn Muffins

Whole wheat muffins topped with prawns, chopped tomato, salt, pepper and grated cheddar cheese.
Ingredients -
113 g Carton Curd Cheese
125 g Prawns (chopped)
1 Tomato (skinned and chopped)
3 Whole Meal Muffins (halved and toasted)
50 g Cheddar Cheese (grated)
Salt and Freshly Black Pepper (to taste)
 
Preparation:

1. Mix the curd cheese with the prawns, tomato and salt and pepper.

2. Spread the mixture over the muffins.

3. Sprinkle with the grated cheese.

4. Place on a baking sheet and bake in a preheated oven for 375 degrees.

5. Bake for 5 for 10 minutes or until the cheese has melted.

6. Serve immediately with a salad.
