1. Heat the oil in a large skillet.
2. Stir in the prawns, garlic and carrots, then saute for 5 minutes.
3. Stir in the mango liqueur, diced mango and mustard brown mustard cook for about 5 minutes more.
4. Correct the taste by adding salt and pepper.
5. Arrange cucumbers slices around rim of serving platter, arrange the prawns in the middle, top with leeks and sauce.
