Prawns in Mango Sauce

Sautéed prawns served with sauce prepared from garlic, carrot, mango liqueur, mango, brown mustard, sea salt, and fresh ground black pepper.

Ingredients -
1/2 cup Cooking Oil
2 pounds Tiger Prawns (cut the head off)
1/4 cup minced Garlic
1/2 cup diced Carrots
1/2 cup Mango Liqueur
1 cup diced Ripe Mango
2 tablespoons Brown Mustard
Cucumber, peeled and sliced thin
1/4 cup Leeks, sliced 1/4-inch diagonally
 
Preparation:

1. Heat the oil in a large skillet.

2. Stir in the prawns, garlic and carrots, then saute for 5 minutes.

3. Stir in the mango liqueur, diced mango and mustard brown mustard cook for about 5 minutes more.

4. Correct the taste by adding salt and pepper.

5. Arrange cucumbers slices around rim of serving platter, arrange the prawns in the middle, top with leeks and sauce.
