Prosciutto Wrapped Prawns
Ingredients -
12 tablespoons Herbed Goat Cheese
1 teaspoon Red Pepper Flakes
2 teaspoons Roasted Garlic
Salt and Pepper
12 Large Prawns (under 16 count), peeled, tail-on, deveined and butterflied
12 thin slices of Prosciutto
2 tablespoons Olive Oil
Preparation:

1. Season the prawns with salt and pepper.

2. Press one tablespoon of the herbed goat cheese in the cavity of each prawns.

3. Wrap each prawn tightly with one piece of prosciutto.

4. In a saute pan heat the olive oil. When the oil is hot, sear wrapped prawns for 2 to 3 minutes on each side, or until the prawns turn pink.

5. Garnish with chopped parsley and serve.
